The Dalmore 12 is a Highland Single Malt shaped by careful maturation in American white oak ex-Bourbon casks, followed by a finish in rare, aged Oloroso Sherry casks. The Dalmore 15 year old was first launched in 2007. Matured in three styles of Sherry cask- Matusalem, Apostoles and Amorosa it develops a rich, chocolaty profile layered with dried fruit, winter spice, orange zest, vanilla and toffee. Under the watchful eye of Dalmore's Master Distiller, the liquid is initially matured in American white oak ex-bourbon casks. This gives its first base of soft vanilla and honey notes. The whisky is then transferred to Gonzalez Byass casks which have held 30YO Matusalem oloroso sherry.
