Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds 'House Style': intensely flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011, 2017 or 2020 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia's finest Cabernets. Powerful - propelled by a wave of fruits - fresh mulberry, fig, Goji berry, raspberry, fresh blackcurrant. And licorice. Ripe and firm, glossy tannins frame many layers, including those that appear to stand above. A textural creaminess, sumptuousness - possibly by way of oak? Balanced, complete, latent.

The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. Penfolds Max's Cabernet Sauvignon is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max's constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds to grow. Max's Cabernet Sauvignon displays the Penfolds 'stamp' inspired by Max Schubert.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.

Red Knot Cabernet Sauvignon is vibrant in colour with aromas of cassis and chocolate, and a full bodied, richly structured palate of blackberry flavours subtly framed with French and American oak.

Medium deep crimson. Light blackcurrant blueberry aromas with hints of black olive, dried herb and brambly notes. Well concentrated wine with plentiful ripe juicy dark and red fruits, fine tannin, good mid-palate sweetness and fresh long acidity. Vegan friendly.

Deep ruby in colour, this Cabernet Sauvignon opens with rich, concentrated aromas of ripe dark cherry, blackberry, cocoa, and sweet spices. Soft, chewy tannins lead to a long, lush finish. Ageing select lots in bourbon whiskey barrels enhances the finish of smoke, sweet spice, and cocoa when added to the final blend. A superb accompaniment to bourbon-glazed grilled meats, charcuterie boards, hearty pasta dishes, and strong cheeses.

Cool red berry fruits, but berry fruits that are also ripe and rounded. The tannins are smooth and welcoming, yet cabernet tannins will do what cabernet tannins will do: sweep through the palate. Accompanying them is a neat acidity and a slick, balanced alcohol. Cabernet sauvignon in equilibrium.

Rich red berry flavours (grenache) then earth and spice and plums (shiraz) and thirdly a long, leafy back-palate (yes, mataro - you've worked this game out now, haven't you...) The sum, however, is much more than the parts. The tannins are neat but not in any way unnoticed. Acidity holds the line. The pure fruit and berry notes are balanced by the tannins and the oak's spice.

This is a wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar cigar box and spice are also evident. The tannins are fine and elegant - a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.

This is a rich full-bodied wine yet at the same time, remains in balanced across the palate with fine, elegant tannins – the hallmark of great Cabernet.
