With each vintage, varietal batches are selected for Grandfather. These batches are individually aged in seasoned old oak casks before being blended together at 14 years of age. This blend is then introduced into the 'Grandfather Solera'. This Solera consists of six stages that are designed to fully integrate all components offering consistency and freshness with a final minimum average blended age of 20 years. Deep amber/mahogany in colour with green-gold tinges, this is a blend of the finest old tawnies. The palate shows classical Penfolds fruitcake, liquorice and vanillin oak flavours with a sweet full and round mid-palate, and a finish that persists on and on.

Great Grandfather Rare Tawny was created in 1994 to celebrate the 150th anniversary of Penfolds. Subsequent blending material has been sourced from stage six of the 'Grandfather Solera' and individual batches of maturing Grandfather that are identified as having exceptional quality. These components are further aged before being blended and introduced into the 'Great Grandfather Solera'. After an initial launch of exactly 1994 bottles to commemorate the year of its inaugural release, Great Grandfather is only ever released in limited quantities to ensure the age and quality of the style is never compromised. With a minimum average blended age of 30 years, Penfolds Great Grandfather Rare Tawny delivers a beguiling mix of age, structure, strength and complexity with each and every sip. Seamless and integrated from start to finish. Dark fruitcake, milk and dark chocolate, coffee, vanillin and aniseed all in abundance. Toffee/brûlée sugar with orange zest and marzipan add length and balance to the palate. The richness and weight of the wine are held in harmony by the spirit-acid balance, which conveys the long, persistent finish.

Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. St Henri is a time-honoured and alternative expression of Shiraz, and an intriguing counterpoint to Grange. It is unusual amongst high quality Australian red wines as it does not rely on any new oak. Released for the first time by Penfolds in the early 1950s (first commercial vintage 1957), it gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasn't succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters with age. It is matured in an assortment of old large vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet may sneak into the blend, the focal point for St Henri remains Shiraz. True to form, the palate is quite savoury. Japanese nori paper and olive brine offer a very morish umami nuance. Fresh blueberry and mulberry leaf anchor the core of the mid-palate. Exotic spices adding intrigue, Alleppey turmeric, toasted cumin, pimento. The tannins are very tactile, comparable to Dutch cocoa. A classic St Henri that will reward extended time in the cellar.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Vibrant and expressive, the Pepperjack Central Otago Pinot Noir pours a brilliant scarlet with a subtle violet hue. Enticing aromas of juicy plum, dark cherry, and mocha are lifted by a hint of wild thyme, setting the stage for a richly layered palate. Bursting with dark cherry and luscious cassis, this Pinot is balanced by silky tannins and a supple mouthfeel. Savoury cocoa notes and resinous spices from oak and whole bunch fermentation add depth, drawing the red and blue fruits across the palate, melding to a complex and concentrated finish.

Pepperjack Mid strikes a balance between the art of traditional winemaking that Pepperjack is renowned for, and the science of cutting-edge de-alcoholisation and flavour retention technology. Still bursting with quintessential Pepperjack character, this mid-strength wine displays aromas of blackberries and plums with hints of pepper and spice. The palate is rich, round, and soft with concentrated berry fruits and soft velvety tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.
